This extra virgin olive oil from Organic Agriculture is obtained by following the strict guidelines of EC Reg. no. 834/07 and 889/08 governing the rules of cultivation. This product is also certified by the ICEA Certification lnstitute. lt is extracted at the moment of average ripening mainly from olives of the Bosana variety. lt is a structured oil, from the clear scent of olives and a green fruity and pungent taste, with bitter and spicy hints and hints of artichoke and thistle.
This oil is obtained from secular plants located in a particularly windy hilly area not far from the sea.
The olives are harvested in the second and third decade of October and in the first and second decade of November, when veraison begins, i.e. the colour goes from green to purple.
Suggestions for use: salads, seafood hors d'oeuvres, wet shellfish and fine meat.
