It is a red rice that comes from the cross between the Venus rice and an indica rice. It is an aromatic rice, scented, with long and narrow grain, characterized by red pericarp, rich in anthocyanins. It has a particular taste and an almost sweet taste, for this reason it is excellent together with food having a strong taste such as fish or legumes and despite cooking it remains crispy.
Apollo is a variety of aromatic rice characterized by the long grain. It is ideal for the preparation of risottos, all-in-one courses rice salads or side dishes. Its distinctive flavour makes it unique for the preparation of fish or meat dishes with a delicate taste. Precisely because of its particular aroma it can also be enjoyed boiled seasoned with olive oil and pecorino cheese.
