    Papassini, once made on the occasion of religious festivals and celebrations, are traditional Sardinian sweets made with durum wheat semolina, almonds, raisins and myrtle liqueur. Decorated with the typical white icing (albumen and icing sugar), they owe their name to the papassas or pabassas, the sultanas of which they are rich.
